Last night when I sat down to tackle my planner, I did it with a side of fries that were so decadent, I had to share them with you!

E’s 2021 Fries

First, preheat your oven to about 400 and get some tunes on. I made my fries with Heart on vinyl and I’m pretty sure this was part of the success.

  • Slice a couple large Yukon Golds into fries (or as many fries as you want).
  • Toss in a bowl with about 2 tbsp of melted ghee, bacon fat, or avocado oil.
  • Add salt and pepper to taste.
  • Spread on a parchment lined cookie sheet and bake, turning once when they start browning.
  • Remove when your fries are your preferred level of crispy, delightful doneness.
  • Sprinkle with a tsp of chopped chives, and maybe some truffle salt!
Avo Smash:
  • Scoop a ripe avocado into a bowl.
  • Add tbsp lemon or lime and about 1 inch of chopped spring/green onion.
  • Add salt and pepper to taste.
  • Smash!

BAM! 2021 fries. This dairy-free treat gives me the happy feeling of poutine (Heart and poutine…can you tell I’m Canadian?) without the cheese.
